Filo dough (also known as Phyllo, meaning "leaf" in Greek) is an exceptionally thin pastry, typically under 1mm thick and nearly translucent. Batter Preparation
Batter is prepared to recipe specifications and loaded into the machine’s batter barrel.
Heating & Baking
The batter is pumped through a precision nozzle onto a rotating baking tray heated to 270–300°C, where it instantly cooks into a thin, consistent sheet.
Forming & Cutting
Once baked, the pastry automatically releases from the tray and is cut into uniform square sheets, ready for further processing or packaging.
